Pumpkin Seeds Roasted With Curry Seasoning

Whether you bake a homemade pumpkin pie for Thanksgiving, or carve Sikhi style a Jack-O-Lantern, to celebrate Bandi Chhor during Diwali, or Halloween, be sure to save pumpkin seeds for an easy to make, nutritious, and tasty snack. The entire pumpkin seed, including the shell, may be eaten. This recipe uses traditional curry flavorings of North India to season pumpkin seeds for an exceptional treat. Seeds from any mature squash may be substituted.


  • 2 cups fresh pumpkin seeds.
  • 1 tsp. olive oil (or other cooking oil).
  • 1 tsp. salt.
  • 1/2 tsp. turmeric (haldi).
  • 1/2 tsp. curry powder (gharam masala).
  • 1/4 tsp. black pepper.
  • 1/4 tsp. cayenne pepper.

Bake: 350 F. 35-40 min.
